Tzimmes

Tzimmes is a side dish based on cooked carrots. This is another representative of the East European Jewish cuisine, which is characterized by usage of the cheapest basic ingredients (in the old days Jews in East European countries didn't belong to the upper class).

1 Kg (2 lbs 3 oz) carrots

10 dried apricots

1/2 cup black raisins

2 oranges

2 tbsps. brown sugar

2 tbsps. butter or canola oil

Preparation time: 45 mins

Servings: 10

Ingredients

Preparation

Peel the carrots and slice them thinly.

Squeeze the oranges.

Dice the dried apricots.

Put all the ingredients in a sauce pot, bring to a boil and reduce the heat to low.

Cook till the carrots are soft but don't fall apart. If needed, add a little water.

Serve cold or hot.
