Tarkari

Tarkari is another essential ingredient in the dal bhat meal. Tarkari actually means vegetable curry, and for this any seasonal vegetables can be used. This recipe includes mostly potatoes, cauliflower and tomatoes, but you can improvise with carrots, zucchini or eggplants as well. Just make sure not to overcook them, turning the dish into a stew.

2 medium size potatoes

1 cauliflower

2-3 tomatoes

1 red onion

4-5 cloves garlic

2.5 cm (1")  ginger root

1/2 bunch cilantro

1 lime (optional)

1-2 green chili peppers

3 tbsps. ghee

2 tsps. ground cumin

1 tsp. turmeric

1 tsp. ground coriander seeds

salt

pepper

Prepare the vegetables for cooking: dice the potatoes into 2 cm cubes, cut the cauliflower into small florets, chop the tomatoes, finely chop the onion and the garlic, peel and chop the ginger, slice the chili peppers.

Heat the ghee in a wok or a frying pan over medium heat.

Add ground coriander, cumin and turmeric and toast for half a minute.

Add the onion and sauté for 3 minutes, then add the chili, garlic, ginger and the potato cubes and sauté 5 minutes more.

Add the tomatoes, let them release their juice and add the cauliflower.

Season with sault and pepper and add 1 cup of water.

Simmer for about 15 minutes, until the vegetables are tender but not mushy.

Chop and add the cilantro and remove from heat.

Garnish with lime wedges and serve hot.
