Taramosalata

Taramosalata in Greek means fish roe salad, but in a matter of fact it is a dip based on mixture of fish roe, bread and oil.

Ingredients

1 onion, finely chopped

1 clove of garlic, thinly sliced

pinch of sugar

200g (7 oz) fish roe (cod/carp)

200g (7 oz) crust-less white bread

1 lemon

olive oil

pepper

Heat a pan with some olive oil and sauté the onion for 3 minutes.

Add the garlic and the sugar and caramelize for another 5 minutes.

Meanwhile soak the bread in water and squeeze tightly to drain, put in a food processor together with the caramelized onion. Add zest and juice of one lemon and 3/4 cup of olive oil.

Process until all the ingredients are combined, then add the fish roe and some pepper and continue processing until the mixture is smooth.

Adjust seasoning to taste.

Another version of this dish uses mashed potatoes instead of bread.

Tip: You can mix in some dill after the taramosalata is ready.
