Spinach Pie

Pies (called pita in Greek) are very popular in Greece, especially in the northern parts of the mainland. This version of spinach pie is very easy to prepare, it is based on filling consisting of spinach and cheese wrapped in crispy phyllo dough.

1 large onion

6 green spring onions

2-4 cloves garlic

500g (1 lb 2 oz) spinach

½ cup chopped fresh parsley

½ cup chopped fresh dill

2 eggs

½ cup Ricotta cheese

1 cup crumbled Feta cheese

8 sheets phyllo dough

1-2 tbsps. sesame seeds

nutmeg

salt

black pepper

olive oil

Preheat the oven to 180°C (350°F).

Lightly oil an 18 x 18 cm (9" x 9") square baking pan.

Chop the onion and the spring onions. Slice the garlic into thin flakes.

Heat 3 tablespoons olive oil in a large skillet over medium heat. Sauté the onion and the green onions until soft and lightly browned, then add the garlic, freshly ground black pepper and a pinch of ground nutmeg and sauté 1 minute more. Stir in spinach, parsley and dill , and continue to sauté until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.

In a medium bowl lightly beat the eggs, add Ricotta, and Feta cheeses and then stir in the spinach mixture.

Lay 4 sheets of phyllo dough in the baking pan one on top of the other, brushing lightly in between with olive oil. Spread the filling, then layer the remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal the filling. Sprinkle sesame seeds on top.

Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.
