Shrimps in Olive Oil

This is a very simple and quick recipe, and it is absolutely delicious. The principle is very simple: the shrimps are cooked for a very short time and then marinated in a mixture of olive oil and herbs. Make sure to let them stay in the marinade for at least 3 hours or better prepare them a day in advance.

300 g (11 oz.) peeled shrimps

1 tbsp. dill

2 cloves garlic

1 lemon

1 cup olive oil

1 cup canola oil

1/2 tsp. oregano

1/2 tsp. salt

Prepare a bowl with cold water and ice cubes.

Chop the dill, slice the garlic and the lemon thinly.

In a pot boil water with 1 tsp. salt. Put the shrimps in and let it cook for not more then 1 minute, then immediately transfer them to the bowl with cold water. This way you stop the cooking process and the shrimps will not turn limp.

In another bowl mix all the other ingredients. Rinse the shrimps and add to the mixture. Let marinate at least 3 hours.
