Sel Roti
Sel roti is kind of a doughnut based on rice flour and deep-fried . This dish was traditionally prepared during various Hindu festivals, but nowadays it can be found everywhere all the time.

To prepare proper sel roti, you need to soak the rice overnight. The rice can be substituted with rice flour but the result will be slightly different. Optionally you can add a tsp. of baking powder.

Making the round shape of sel roti takes a little practice. I suggest you start with smaller size and gradually increase when feeling confident.

Ingredients
1/2 Kg white rice
250 ml milk
50g ghee
125g wheat flour
100g sugar
1 tsp baking powder (optional)
1 ripe banana (optional)
1/4 tsp ground cardamom
1/4 tsp ground clove
oil for deep-frying
Preparation
Wash the rice and soak it overnight.
Drain the rice and put it in a food processor.
Process into a paste.
Add all the other ingredients and gradually add some water until you get a soft batter (similar to crepe or pancake).
Let the batter rest for 30 min.
Meantime in a wok or a pot heat the oil to medium-high temperature.
Use a pastry bag or any other tool that enables to pour the batter in a constant stream. You will need about 1/4 cup of batter for each piece.
Pour the batter in a circular motion into the hot oil. Use a wooden spoon or stick to get the round form.
Deep-fry from both sides until golden brown. Drain on a paper towel and serve hot.
