Salad with walnuts

Thanks to the Georgian climate, the vegetables in Georgie are fresh and rich of taste, so the local cuisine has a lot of fresh vegetable salads to offer. This recipe is a very popular salad with walnuts dressing.

Feel free to improvise with different vegetables. This dressing can suite many directions.

5 medium-sized ripe tomatoes

4 cucumbers

3 bell-peppers of any color or mixed

1 red onion

1 chili pepper

1/2 cup of fresh cilantro or parsley

1/2 cup purple  basil leaves

1 cup walnuts

2 cloves garlic

1 tsp. coriander

1 tsp. fenugreek

2 tsps. red wine vinegar

1/2 cup water

3 tbsps. olive oil

salt

pepper

Cut the tomatoes into medium-sized chunks.

Slice the cucumbers without peeling them.

Slice the bell peppers into rings.

Slice the onion into thin rings as well.

Slice the chili pepper thinly and remove the seeds.

Remove the cilantro/parsley and basil leaves from the stems.

Mix all the vegetables and leaves together in a bowl.

Put all the rest in a food processor and process until you get a thick sauce.

Mix the sauce with the salad and serve immediately.
