Pulao

Pulao is a dish based on rice enriched with some vegetables, like green peas, carrots, tomatoes etc. It is a close relative of pilaf, popular in middle-eastern countries, and just like the pilaf, there are many ways to prepare it. Additional ingredients except those provided below can be chopped tomatoes, diced carrot, cumin seeds, turmeric etc., so use your imagination and improvise.

Pulao can be used as a side dish substitute for plain rice.

Ingredients

2 cups Basmati rice

2 bay leaves

5 cloves

5 cardamom pods

2 cinnamon sticks

2-4 whole dry chilies

1 cup green peas (fresh or frozen)

1/2 cup raisins

1/2 cup cashew nuts

4 tbsps. ghee

salt

Preparation

Rinse the rice and soak it in water for 30 mins.

Heat a pot on medium fire and add the ghee.

Add all the spices and fry them for 20 seconds, then add peas, raisins and cashew nuts.

Stir everything for 2-3 minutes.

Drain the rice and add to the pot. Stir everything then add the salt (about 1 tsp.) and 2 cups of boiling water.

Cover tightly with a lid, set the heat to low and let cook for 15 minutes. If needed, add some boiling water.

Let rest covered for 5 minutes more, then serve.
