Potato Salad

This dish has many names and much more different recipes. It is known as potato salad, mayonnaise salad, Russian salad, Olivier or de boeuf salad. The common ingredients are potatoes, hardboiled eggs, carrots, green peas and mayonnaise. When prepared for some special occasion like a holiday meal, this salad can be garnished in a lot of different ways, so surf the Web to get some ideas.

I present the recipe as it was prepared by my grandmother for the Passover meal.

4 medium sized potatoes

4 carrots

1 red bell pepper

2 salt-pickled cucumbers

1/2 cup green peas (fresh or frozen)

200 g (7 oz) bologna sausage

5-6 eggs

5 green onions

1/2 cup dill

1 cup mayonnaise

salt

pepper

Preparation time: 1 hr.

Ingredients

Preparation

Cook unpeeled potatoes and carrots until tender.

In a separate sauce pot cook the peas until ready but not too soft.

Boil the eggs until they are hard.

Peel the potatoes and the carrots.

Chop the dill and the green onions.

Dice everything into dices of 1 cm.

Mix all vegetables, herbs, sausage and eggs in a bowl with half cup of mayo.

Add salt and pepper to taste.

Spread the rest of the mayonnaise over the top and garnish in your preferable way.

Serve cold.
