Pork Gyros
Gyros is the most well known Greek fast food dish. Usually it is made of pork or chicken pinned on a vertical rotisserie which turns slowly in front of an electric or gas broiler. Gyros are usually served with some vegetables and yogurt all wrapped in a Greek pita bread. Gyros is the relative of Turkish doner, Middle Eastern shawarma and Mexican taco. In our case we change the recipe a little by first marinating the pieces of meat, and then frying it in a pan.
400 gr (14 oz.) pork tenderloin
1 red onion
1 tbsp. rosemary
1 tbsp. dry oregano
2 cloves garlic
2 tbsp. olive oil
2 tbsp. white wine vinegar
1 tsp. honey
salt
pepper

Clean the meat of any external fat and cut it into 1 cm thick pieces.
Put in a bowl, add the rest of the ingredients, mix well, cover with a plastic wrap and let marinade in the fridge for at least 6 hours, then bring it to room temperature.
Heat a frying pan over high fire. Add some olive oil and fry the pieces of pork (about 2-3 mins on each side). Add 1 tbsp. white vine vinegar and let it evaporate and then remove the meat from the pan.
Serve on a pita bread, add some tzatziki sauce on top, a slice of tomato and some lettuce.
Tip: Don't fry all the meat at once, but in 2-3 rounds, otherwise the pan temperature will drop and the meat will cook instead of frying.
