Pork Ribs

This is a very interesting and unusual, but very "Brazilian" recipe. The ribs are marinated for several hours in wine, vinegar and herbs, then grilled coated with manioc flour. The result is crispy from the outside and tender and juicy from the inside.

1 Kg (2 lbs 4 oz) short pork ribs

1 cup coarse manioc flour

Marinade:

3-4 garlic cloves

2½ cm (1") fresh ginger

1 red hot chili pepper

2 limes

4 tbsps. sugar

½ cup white wine vinegar

½ cup red wine

1 tsp. marjoram

½ tsp. salt

½ tsp. black pepper

Preparation time: 20 mins + 6 hrs. marinating

Mince the garlic, peel and chop the ginger, chop

the chili, squeeze the limes and grate zest of one of them.

Mix all the marinade ingredients together and marinate the ribs for at least 6 hours in the fridge.

Grill the ribs until they're almost done, remove from heat, coat well with manioc flour and put them back on the grill until they're done.
