Feta Pie Ioannina Style

This recipe has been given to me by Eleni, our host in Mir hotel, Ligiades, overlooking the beautiful Ioannina lake. This simple and wonderful pie was served for breakfast along with homemade marmalades and cakes, and I just couldn't help but asking for the receipt. I have prepared it several times ever since, and it was delicious every time, reminding us of the magic views of Greece. This pie can be served for breakfast or for dinner, consumed by itself or as a basis for tzatziki, scordalia or taramosalata. It is easy to prepare and can be kept in the fridge for up to 3 days.

3 eggs

3½ cups flour

3 cups water

1 tbsp. olive oil

400 gr (14 oz.) Feta cheese

Butter

Preparation time: 30-35 mins

Difficulty level: Easy

Preheat the oven to 200°C (390°F). Put a baking pan in.

Crumble the Feta into small pieces.

In a bowl beat the eggs well.

Mix in the flour, water and olive oil. You should get a runny batter.

Butter the hot baking pan and put the mixture in.

Sprinkle with Feta pieces and some olive oil.

Bake for 20-25 minutes.

Let cool and cut into servings.
