Pelamushi

Pelamushi is a popular Georgian jelly-like dessert, that no supra feast can skip. It basically contains four ingredients: grape juice, sugar and a mixture of wheat and corn flour. It is easy to prepare and all it needs is patience.

Pelamushi can come in different colors, depending on the grapes used and you can garnish it with any kind of nuts, pomegranate seeds or pumpkin seeds. Try to improvise by adding pomegranate juice or cherries to the grapes to get a different color and taste.

The following is the basic recipe using fresh grapes. You can shorten the process by using ready grape juice but the result will not be the same

Ingredients

2 Kg (4 lb. 7 oz.) grapes

1/4 cup wheat flour

1/4 cup corn flour

2-4 tbsps. sugar

walnuts, hazelnuts or pumpkin seeds

Preparation

Wash the grapes and remove the stems.

Put the grapes in a colander over a pot and mash them by hand until only the skins and the seeds are left. You should get about 1 Liter of juice.

Put the pot over high heat and bring to a boil, then reduce the heat to low and let it simmer for 2-3 hours until the amount has been reduced by 50%, stirring from time to time.

Add sugar to taste.

Put a cup of juice in a bowl and add the flours. Stir well until the flours are blended with the juice into a smooth mixture.

Pour the mixture back into the pot with the rest of the juice. Bring to a boil, stirring continuously, and then reduce the heat to low and let cook for about 10 minutes. Don't stop stirring! The Pelamushi is ready when it gets thick and there is no flour smell to it.

Immediately pour the Pelamushi into a bowl or personal ramekins and let it cool down. After 2 hours it is ready. It can be kept in the fridge wrapped in plastic for several days. 

To serve turn it over to the serving dish and garnish with walnuts, whitened hazelnuts or pumpkin seeds.
