Palmito Salad
This simple and light salad is just perfect to accompany the heavy churasco meal. Just be sure to season it right before the dinner, so the tomatoes will not turn limp.

4-5 ripe tomatoes
4-5 lettuce leaves
2 red onions
1 can hearts of palm
olive oil
red wine vinegar
freshly ground black pepper
salt

Preparation
Wash and drain the lettuce.
Arrange the lettuce on a big serving plate.
Cut the tomatoes into thin slices.
Arrange the tomatoes around the plate.
Slice the onions and arrange the onion rings above the tomatoes
Drain the hearts of palm and cut them into finger-thick slices.
Pile the hearts of palm in the middle of the plate.
Sprinkle olive oil and vinegar and put some black pepper.
Just before serving sprinkle salt.
