Marinated Octopus

Octopus dishes can be found in almost every Greek meze meal. If you have difficulties finding fresh octopus in you area, you can use a frozen one. The deep-freezing process does not affect the octopus's taste, and may even shorten the cooking time. This dish can be prepared a day or two in advance. Keep the marinated octopus in the fridge and take it out one hour before the dinner so it will be served in room temperature. Use only tentacles for this dish.

½ Kg (1 lbs 2 oz) octopus

1 cup olive oil

½ tsp. salt

½ tsp. black pepper

2 cloves garlic thinly sliced

1 tsp. allspice

1 lemon sliced

2 tbsp. chopped parsley

½ red onion thinly sliced

2 green spring onions chopped

2 bay leaves

Preparation time: 2 hrs + 2 hrs marinating

Put the octopus in a pot, cover with water, bring to a boil and then reduce the heat and cook until the octopus is soft (up to 2 hours).

Cut the octopus into 5 cm (2") pieces.

Mix the rest of the ingredients in a bowl and add the octopus.

Marinate for at least 2 hrs.
