Dal Bhat Tarkari
Dal bhat is THE national dish of Nepal and without doubt is the most identified with Nepali cuisine. The locals eat this dish at least once a day. On the treks up in Himalaya mountains, where all the provisions are transported on human backs, the porters consume dal bat twice or sometimes three times a day. When you order dal bhat in guest houses along the treks, you get free refill too. Dal bhat is a perfectly vegan dish and is rich with vegetable protein, just like Brazilian rice and black beans.

So what is dal bhat exactly? It is a whole meal in one dish. Dal bhat consists of white rice (bat), lentil soup (dhal), vegetable curry (tarkari) and usually some pickles and some green vegetables (saag). The various versions change from one place to another in their side ingredients and level of spiciness. Dal bhat is usually served on a big plate or tray with a hill of rice in the middle and all the other ingredients arranged around it in small bowls. The bowls' ingredients are mixed with the rice and eaten together (the locals usually do it with their right hand fingers).
