Fish Moqueca (Moqueca de Peixe)

Moqueca is a very tasty Bahian dish. It is in fact a fish stew prepared with the traditional ingredients: coconut milk, palm oil and Malagueta hot peppers. This dish is very easy to prepare and the result is extraordinary.

For preparing the Moqueca, any white sea fish can be used: cod, halibut, grouper, sword fish. I even heard about someone using salmon.

800g (2 lbs) fish, cleaned & boneless

2 limes

2 medium onions

1-3 Malagueta peppers

4-5 garlic cloves

2 bell peppers (of different colors)

4 medium tomatoes

2 cups coconut cream

2 tbsps. palm (dendê) oil

Cut the fish into large chunks, put in a bowl, pour juice of 2 limes, season with salt and pepper and put in the fridge for half an hour.

Cut all the vegetables into thin slices.

Heat a medium-sized pot, put some olive oil and sauté the onions and the Malagueta pepper(s) for 3-4 minutes, add the garlic and bell peppers.

Sauté 4 minutes more and add the tomatoes. Season with salt and pepper and cook 5 minutes more.

Put in the fish with the marinade and the coconut cream, bring to a boil and reduce the heat to medium-low. Simmer for 5 minutes more, adjust seasoning and sprinkle the palm oil.

Remove from heat.
