Mchadi

Mchadi is a very popular flatbread made of corn. It is usually served alongside lobio but it can accompany soups, dishes with thick sauce or serve as a basis to put some cheese on top. Mchadi is very fast and easy to prepare.

The following recipe will give you a very fluffy, tender result. If you prefer a thicker version, omit the soda and the vinegar. You can also substitute milk with more water.

Ingredients

2 cups corn flour

1/2 tsp. salt

1 tsp. sugar

1 cup milk

1 cup water

2 tbsps. vinegar

1/2 tsp. drinking soda

vegetable oil

Preparation

In a bowl mix the flour with salt and sugar.

Mix the milk with water and add it to the bowl, mixing continuously.

Dilute the soda in vinegar and add to the mixture.

Continue mixing until all combined together. You should get wet, soft, but not runny dough.

If it is too dry, add some more water. Let it rest a few minutes.

Heat a pan over medium heat. Add oil so it is about 1 finger deep. Shape small balls, flatten them and fry for about 5 mins. on each side until golden brown. Serve hot.
