Malagueta Sauce

This sauce is based on Malagueta peppers, widely used in Bahian cuisine.

It is very handy if you want to add up some fire to your dishes. You can use it practically with every dish. It can be preserved in the fridge for weeks and in the freezer for years.

If you cannot find fresh Malagueta peppers, try to use red hot chili peppers instead (add a habanero pepper or two to spice it up).

‎1 cup Malagueta pepper deseeded

1 cup white wine vinegar

1 cup canola oil

4 tbsps. tomato paste

1 onion

3 cloves garlic

1 tsp. sugar

1 tsp. salt

Preparation

Put all the ingredients in a blender and process until all combined together.

Pour the sauce to a saucepan and bring to a boil.

Reduce the heat and simmer for 3 minutes. Let cool. Keep in a closed glass can in the fridge.

Watch out! This stuff is HOT!
