Majadra

Majadra is a mixture of rice, lentils and caramelized onions. It is very popular as a side dish all over the Middle East and Arab countries. It can be served as a side dish with meat or fish, and also as a meal by itself.

1 cup white Basmati or Jasmin rice

1 cup brown or green lentils

4 garlic cloves

3 white onions

4 tbsps. samneh (clarified butter)

1/2 tsp. cumin

pinch of cinnamon

salt

pepper

olive oil

Rinse the rice well and drain.

Rinse the lentils.

Chop the garlic thinly.

Half the onions lengthwise and then slice into 1/2 cm slices.

In a rice pot heat some olive oil and add the chopped garlic.

Mix and add the rice, cumin, 1/2 tsp. salt, and pepper.

Stir for 2 minutes, add 2 cups of boiling water, mix well, reduce the heat to low, cover with a lid and cook for about 20 mins. until the rice is ready.

In the meantime in another pot put the lentils with 2 cups of water and cook over medium heat until tender.

In a frying pot melt the samneh on a medium low heat and add the sliced onion, salt, pepper and cinnamon. Sauté for about 20 mins until golden.

Mix all the parts together, adjust the seasoning and serve.
