Lobio

Lobio is kind of stew made of kidney beans. It is very popular in Georgia and usually is served with mchadi, the Georgian cornbread.

Lobio is very easy to prepare, and you can use it as a side dish for almost anything.

Ingredients

500g (1 lb. 2 oz.) dry red kidney beans

1 cup walnuts

2 medium onions

1/2 cup cilantro

3-4 cloves garlic

1/4 tsp. ground coriander seeds

1/2 tbsp. fenugreek

2 bay leaves

salt

pepper

olive oil 

Soak the beans in plenty of water for at least 4 hours or overnight, then rinse and drain.

In a pot boil the beans in 1.5-2 L of water. Add the bay leaf and cook until tender.

Chop the onions and sauté in a pan with olive oil.

Chop the cilantro thinly, mince the garlic.

When the beans are ready, drain the water, but keep 1 cup of it. Remove the bay leaves.

Mash the beans, add all the rest including salt and plenty of black pepper to taste and mix well.

Add the water you have kept aside and cook about 5 minutes more, stirring from time to time.

Crush the walnuts lightly and add to the beans.

Garnish with some fresh cilantro and serve with mchadi.
