Lemon Rice

Lemon rice is a nice addition to many dishes, especially those cooked in a sauce.

The recipe is very simple and the result is delicious.

2 cups long grain rice

4 tbsp. olive oil

1 tsp. salt

4-5 tbsp. lemon juice

4 cups hot chicken broth

Heat a saucepan over medium heat. Add in oil.  Heat the chicken broth.

After about a minute, add in the rice and sauté for 2-3 minutes, stirring often.

Add salt and lemon juice and sauté a minute more.

Slowly add in chicken broth. Let it come to a boil, then reduce heat to the lowest setting and put the lid on the pan.

Cook for 30 minutes. If there’s still a bit of liquid, let it cook without the lid for another 5 minutes, then turn the heat off and let it rest for 10 minutes.
