Passover Dinner
Passover or Pesach is one of the most important Jewish religious holidays, commemorating the liberation of Jews from Egyptian slavery and their freedom as a nation under the leadership of Moses. Passover is a spring festival lasting for 7 days, during which according to the Jewish religion it is not allowed to eat any leavened bread or any product that may contain leavened dough. Passover starts in the evening with Passover Seder which is a ritual of reading the Hagadah (the story of the Egyptian exodus), followed by the Passover dinner. Just like on the Thanksgiving, on Passover Seder the whole family gathers together, each bringing traditional dishes, so usually the amount of food on the table is well above average, and the ability of the guests to deal with the situation is mostly due to the fact that reading the Hagadah can take a few hours during which 4 glasses of wine should be consumed with almost no food at all.
The following menu presents a set of the most popular Passover dinner dishes in the Ashkenazi (European Jewish) tradition.
In order to make the dishes of this menu some preliminary preparations are needed: First of all the beef tongue should be prepared about 3-5 days in advance, the gefilteh fish and the p'tcha (holodetz) should be prepared a day before. Potato salad and chrain can be prepared a day in advance. On the day of the meal start with the matzo ball soup, then the potatoes for the latkes, and while they are cooking, start preparing the chicken. Leave the tzimmes and charoset to the end, since they don't need much time. Happy Passover!
