Grilled Cheese

The cheese used in Brazil for grill is called queijo coalho. It is a white hard cheese, which does not melt too much under heat. If you cannot find such a cheese, you can substitute it with halloumi from Cyprus, Greek feta or even hard mozzarella or parmesan.

If using wooden skewers, soak them in water for a hour before using them. This way they will not get burned out on the grill.

Cut the cheese into prolonged rectangular bricks (see picture).

Skewer each brick separately. Grill a few minutes on each side, so it gets the nice golden brown color without melting. Sprinkle some oregano and serve.
