Many words have been written about the Greek cuisine and hospitality, but in my opinion what characterizes it most of all is its down-to-the-earth simplicity. Greeks have very strong connections to their history and traditions and you can taste this in their food.

 

The ingredients are fresh and rich of taste, untouched by industrial processing. Being a sea country with hundreds of islands and long sea shore along with rugged mainland terrain, Greece is characterized by using a lot of fish and seafood in their diet as well as dairy products coming from sheep and goats. The delicious yogurt and Feta cheese are the best known ambassadors of Greek cuisine, along with the rich aromatic olive oil made of Kalamata black olives and used both for seasoning and cooking.

 

As we said, the Greek food is simple, utilizing the rich taste of its basic ingredients. Greeks usually don't use much seasoning, except the very basic salt and pepper, but of the seasoning herbs it is the oregano that gives many known Greek dishes, like souvlaki and the Greek salad their characteristic aroma. Thyme, rosemary and dill are common too, as well as white or red wine vinegar.
