Georgia is situated between high mountain ranges bordering it from the North and from the South, with the Black Sea on the West. This geography creates a unique climate. The lowlands of Georgia are  warm with plenty of precipitation all around the year, producing fertile soil and developed agriculture. And indeed Georgia is very well known among the neighboring countries for its fruits and vegetables. Georgians selling oranges on the streets of Moscow is  a common picture on summer months. It is no surprise that Georgian cuisine is full of dishes made with vegetables and fruit, making Georgia a real paradise for vegetarians and vegans.

The following lunch menu suggests some of the very best Georgia has to offer in the vegetarian field. This whole meal can be prepared in just 3 and half hours, but it is better to prepare pkhali and eggplant rolls a day before. Start with slicing and salting the eggplants and meantime prepare pkhali and put in the fridge, then finish with the eggplant rolls. On the day of the meal start with cooking the beans for lobio, then make the khinkali dough. While it is resting, finish with the lobio, then fill and cook the khinkali. While it is cooking, make the mchadi. When everything is ready, make the salad and serve all dishes.
