Brazilian Flan

Flan is one of the popular deserts in Brazil, available at almost every restaurant  or café.

The joke says that the statue of Christ overlooking Rio de Janeiro is holding his hands apart ready to clap them the moment he sees anyone working down there. So as you can understand from this, Brazilians don't like hard work, and that's how the flan was created. It is very simple to prepare. Just blend the ingredients in a blender or a food processor and then bake it in the oven in a double-bath.

1 cup sugar

2 cans sweet condensed milk

same amount of whole milk

6 eggs

Preheat the oven to 160°C (320°F)

In a sauce pan, melt the sugar over medium heat stirring constantly. After about 10 minutes, once it's golden brown, pour the caramel into a 25 cm (10") baking mold and swirl it to cover the bottom and the sides. Let it cool down before you add the flan mixture so they don't mix together.

Blend the rest of the ingredients in a blender/food processor until smooth.

Pour the flan mixture into the mold and cover with foil.

Fill a large baking pan with water and place the mold in it.

Bake it for 40 minutes covered, then remove the foil and bake about 20-30 minutes more or until the top is golden brown.

Let the flan cool down and then cool in the fridge overnight.

To remove the flan from the mold, put it in a pan with hot water for a minute and then carefully flip it on a serving plate.
