Dal
Dal is the indispensable ingredient of "dal bhat tarkari" menu. It is a thick lentil soup. It can be prepared from any type and color of lentils. My preference is to mix them.

Ingredients

1 cup lentils mixed
1 white onion
1 chili pepper
4 tomatoes
3 tbsp. ghee
2 tsps. coriander seeds
2 tsps. cumin
1 tsp. turmeric
1 cup cilantro
salt
pepper
Wash the lentils and soak them in water for 30 mins.
Dice the onion, slice the chili pepper thinly, chop the tomatoes and the cilantro.
In a saucepan heat the ghee over medium fire.
Add the spices and toast them for 1/2 minute.
Add onion and chili and sauté until the onion is translucent.
Add the tomatoes and sauté 2 minutes more.
Stir in the dal and add 3 cups of water.
Reduce the heat to medium-low and let the dal simmer for 40 minutes. If needed add some boiling water. The final product should be of a thick soup consistency.
Adjust the seasoning and serve.
