Chicken with Olives and Red Peppers

This recipe is a classical Greek way of preparing chicken. Chicken portions are browned and then cooked slowly with vegetables and spices. The result is delicious!

Ingredients

6 portions of chicken

1 big onion

2 red bell peppers

250 gr (9 oz) black olives

2-3 ripe tomatoes

1 cup red wine

salt

pepper

thyme

olive oil

Dice the onions, slice the peppers.

Heat a pot over medium-up fire. Put some olive oil and

brown the chicken portions from all sides for about 10 mins.

Set the chicken portions aside.

Add some more olive oil to the pot and put in the onions,

then the sliced peppers and the olives, while constantly

stirring.

Add the salt, the pepper and a pinch of thyme. Put back the

chicken portions.

Dice the tomatoes finely and add them to the pot.

Pour in the wine and water to cover the chicken, bring to a boil, reduce the heat, cover the pot and cook for a hour and a half or until the chicken is tender. Remove the chicken from the pot, reduce the sauce and poor over the chicken portions along with the olives and the peppers.
