Cheese Bread (Pão de Queijo)

This amazing snack is so delicious, you will not stop eating it till it's all gone. It looks like very light balls, crispy on the outside and fluffy on the inside, with wonderful cheesy flavor. This recipe uses parmesan cheese but you can feel free to experiment with other yellow cheeses too.

1 cup milk
½ cup vegetable oil
1 tsp. salt
2 cups tapioca flour
2 large eggs
1½ cups grated Parmesan cheese

Preheat the oven to 230°C (450°F). Line 2 baking pans with baking paper.

Put the tapioca flour in the mixer bowl.

Put milk, oil, and salt in a medium saucepan and bring to a gentle boil over medium heat, stirring occasionally. Remove from heat and add to the tapioca flour and stir with a wooden spoon until you see no more dry tapioca flour. The dough will be grainy and gelatinous at this point.

Transfer the bowl to a mixer fitted with a paddle attachment. Process for a few minutes at medium speed until smooth.

Add the eggs into the dough one at a time, then add the cheese. The resulting dough will be very sticky, stretchy, and soft with a consistency somewhere between cake batter and cookie dough.

Scoop the dough onto the baking pans using two spoons, leaving some space between the puffs. Dip your spoons in water between scoops to prevent sticking.

Place the baking pans in the oven and immediately reduce the heat to 180°C (350°F). Bake for about 15 minutes, until the puffs start to turn golden-brown on the bottoms.

Cool for a few minutes and serve warm.
