Chatamari (Nepali pizza)
This dish is the Nepali answer to pizza. Basically it consists of a base made of rice flour batter on top of which you can put basically anything: vegetables, minced meat, grated cheese, eggs or all the above ingredients altogether. The whole thing is prepared in a flat frying pan covered with a lid.
Originally the topping and the basis are cooked altogether, but I personally prefer to sauté the meat with the vegetables beforehand.

Ingredients
1 cup rice flour
4 eggs
250g (9 oz) any minced meat
1/4 cup fresh cilantro
1 tsp cumin powder
1 tsp ground coriander seeds
1 onion finely chopped
1 tsp red chili powder
2 cloves garlic
1 cm ginger
1/2 tsp turmeric
1/2 cup grated cheese
1 tomato
canola oil
Preparation
In a bowl gradually mix the rice flour with 1/2 cup of water. You should get quite a thin (pancake like) batter. If needed add more water.
Chop the onion, mince the garlic and the ginger, thinly slice the tomato.
Heat a frying pan on a medium-high heat. Put some oil and add cumin and ground coriander. Wait 15 seconds and then add the chopped onion. Sauté until golden.
Add the garlic and the ginger, sauté one minute more and add the meat.
Keep stirring for 5 minutes until the meat changes the color, then add the chili and the turmeric.
Stir well and remove from heat.
Heat a big flat skillet on medium heat. Put 1/2 tbsp. oil and spread it into a thin layer.
Pour the batter to form a thin pancake.
Put the meat topping over the batter, cover with tomato slices and sprinkle the grated cheese.
Cover tightly with a lid and cook for 5-7 minutes, then break the eggs above and cook covered for 3 minutes more.
Garnish with some chopped fresh cilantro and serve hot.
