Charoset

Charoset is a part of the Passover Seder ritual, and therefore must be present on the Passover meal table. This dish is a mixture of different fresh and dried fruits and nuts. Every Jewish ethnic group has a different tradition for preparing charoset: Oriental Jews use dried dates as the main ingredient, while Jews from European countries use apples. The following recipe is of the East European tradition.

5 Granny Smith apples

1/2 cup black raisins

1/2 lemon squeezed

1 tbsp. cinnamon

1/4 cup red sweet wine

1 tbsp. honey

1/2 cup walnuts

2 tbsps. matzo meal

Ingredients

Preparation

In a small bowl soak the raisins in wine for 15 mins.

Peel and grate the apples with a coarse grater. Squeeze them to draw the juices out.

Crush the walnuts coarsely and keep aside.

In a bowl put the apples, the raisins with wine, lemon juice, cinnamon and honey and mix well together.

Mix in the walnuts and sprinkle matzo meal over the dish.
