Caipirinha

Without doubt caipirinha is the Brazilian national cocktail. It is made of cachaça, the Brazilian national spirit fermented from raw sugarcane. The cachaça is mixed with lime, sugar and plenty of ice, resulting in a sweet refreshing cocktail, perfect for Brazilian tropical climate. Just don't try to dance samba after drinking too many caipirinhas.

4 tsps. sugar

120 g (4 oz.) cachaça

crushed ice

Roll the lime on the working surface, pressing it with your hand to release the juices. Cut out the top and the bottom of the lime, then cut it in two and then each half in four. Put the lime in the glasses.

Add the sugar and using a muddler, gently squeeze the lime to release its juices.

Fill the glass with crushed ice.

Slowly pour the cachaça over the ice and gently mix the drink.

Garnish with a lime slice.

Tips:

Use a good quality cachaça. If you substitute it with rum or another spirit, you will get a completely different result. By the way substituting cachaça with vodka is called caipiroska, with saki - caipisaki and so on.
