White Rice
White rice is an essential part of Brazilian cuisine. Along with the black beans white rice is the default side-dish almost for everything. In some restaurants you may order pizza or spaghetti and get the rice with a nice topping of black beans as a side dish.
White rice Brazilian way is not difficult to prepare. Unlike Italian risotto, it is not sticky.
This is achieved by using long grain rice and washing it before cooking to get rid of the excess starch.

3 cups Basmati or jasmine rice
3 tbsp. olive oil
1 medium white onion
3-4 cloves garlic
6 cups boiling water
salt
pepper

In a strainer wash the rice until the water comes out clear. Let it drain.
Dice the onion and the garlic thinly.
Put a sauce pan over medium heat. When it is hot, add the olive oil and sauté the onion for 2-3 minutes until it starts to get golden, then add the garlic. Sauté until golden brown and add the rice. Keep on stirring 2-3 minutes until the rice starts to change the color.
Add the water, salt and pepper, reduce the heat to minimal and cover with a lid.
Cook for about 10 minutes, until all the water has absorbed. If the rice is not ready yet, add some more boiling water.
When ready, remove from heat and let it rest covered for 5 minutes, then fluff it with a fork.
