Batida
Batida is a traditional cocktail made of cachaça and some fruit or coconut milk. There are plenty of recipes for batida. This cocktail is perfect for warm Brazilian nights or to accompany a Feijoada.
Batida de coco (coconut batida):
2/3 cup cachaça
1 cup coconut milk
1 cup condensed milk
100 g (3 1/2 oz.) coconut flakes
10 ice cubes
Pineapple batida:
1/4 small fresh pineapple
2 passion fruits
1/4 cup condensed milk
1/4 cup double cream
2/3 cup cachaça
2 cups crushed ice
Leite de onça (jaguar's milk):
1/2 cup cachaça
1/2 cup condensed milk
1/2 cup milk
1/4 cup cocoa liqueur
8 ice cubes

Preparation
Put 1 tbsp. coconut flakes in a small saucer.
Poor some coconut milk in another saucer.
Put the rest of the ingredients in a blender and process for 1 minute.
To serve dip high cocktail glasses' rims in the saucer of coconut milk and then in the coconut flakes.
Poor the batida carefully and serve
Peel the pineapple, cut into large pieces and put in the blender.
Cut one passion fruit in half and scoop it to the blender as well. Save the other one for garnishing.
Put the rest of the ingredients in a blender and process for 1 minute.
Poor into glasses and garnish with a teaspoon of passion fruit pulp.
Put the ingredients in a blender and process for 1 minute.
Pour into cocktail glasses.
